This is adapted from one of Delia’s recipe
Because they’re so easy to make, I make them in small quantities (as much as I need them) so there isn’t a lot of leftovers just sitting in the fridge.
What you need:
- 1 Lemon, zest grated, then juiced
- 1 Egg
- 80 g Caster sugar
- 50 g Unsalted butter
- 2 tsp Cornflour
How to put this together:
- In a bowl, whisk together egg + caster sugar
- Add lemon zest + lemon juice. Whisk until well mixed
- Add cornflour. Whisk until well mixed
- Transfer to a pot over medium heat, add butter, continuously whisk until the mixture thickens, about 5-7 mins
- Take off heat, then continue to whisk for 1-2 mins
- Leave to cool
